Matcha Chia Energy Balls

Yields 12 small energy balls (or 6-8 medium sized)

Ingredients

  • 17 mejdool dates

  • 1 tsp coconut oil

  • 1-2 tsp matcha powder

  • 1 tsp vanilla

  • 2 tbsp almond butter

  • 1/4 cup gluten free oats (or with gluten)

  • 2 tbsp chia seeds

  • 2 tbsp pumpkin seeds

  • 1/4 tsp rock salt

Method

  1. Remove the seeds from the dates & soak for 3 mins in hot water (then get rid of the water)

  2. Blend ingredients mentioned above together (except for the chia seeds & pumpkin seeds)

  3. Once you get a dough-like consistency, transfer to a bowl and add your chia seeds and pumpkin seeds to mix with a spoon or with your hands

  4. Roll into ball like shapes

  5. Line a Tupperware or airtight container with parchment paper & spread out your energy balls evenly

  6. Place in the freezer for at an hour or more and enjoy!

  7. Lasts about a month in the freezer (but trust me, they won’t last you that long!)
