Matcha Chia Energy Balls
Packed with antioxidants.
Stimulating & energising.
10 minutes or less.
Yields 12 small energy balls (or 6-8 medium sized)
17 mejdool dates
1 tsp coconut oil
1-2 tsp matcha powder
1 tsp vanilla
2 tbsp almond butter
1/4 cup gluten free oats (or with gluten)
2 tbsp chia seeds
2 tbsp pumpkin seeds
1/4 tsp rock salt
Remove the seeds from the dates & soak for 3 mins in hot water (then get rid of the water)
Blend ingredients mentioned above together (except for the chia seeds & pumpkin seeds)
Once you get a dough-like consistency, transfer to a bowl and add your chia seeds and pumpkin seeds to mix with a spoon or with your hands
Roll into ball like shapes
Line a Tupperware or airtight container with parchment paper & spread out your energy balls evenly
Place in the freezer for at an hour or more and enjoy!
Lasts about a month in the freezer (but trust me, they won’t last you that long!)
