Vegan Herbed Tofu Summer Salad with Creamy Dijon

Wash & Peel 1 zucchini until you reach the heart for your zucchini noodles

Wash & Cut 1 large cucumber for super hydration & some crunch

Wash your cherry tomatoes

Wash & Trim off the extremities of your asparagus. Boil water & dip the asparagus in for just 1 minute

Peel & chop 2 carrots

Cut up some herbed tofu, or a seitan steak or grab some chickpeas or green peas even, anything goes! The Protein of your choice! 

Throw it all in a bowl

Don't forget the yum & creamy dijon dressing to go with it! 

For the Dijon dressing you just need:

  • 1/4 cup almond milk
  • 1 - 1.5 tbsp Dijon mustard 
  • 1 tsp olive oil
  • Pinch rock salt
  • Pinch black pepper 
  • Pinch chili flakes
