Eggs, Avocado & Zucchini Noodles

Spring in the air, and it's time to get creative with fresh, hearty, nutritious salads. 

This salad is so easy to make, not at all time consuming and delicious, It won't disappoint. Try it! 

This is a gluten-free, protein packed, healthy fats filled colorful bowl. 

Prep Time: 20 mins


  • 1 Green zucchini
  • 1/2 Avocado
  • Linseeds, poppy seeds, sunflower seeds mix
  • 2 Eggs 
  • Roasted Cashew nuts 


  • Olive Oil
  • Lemon
  • Black pepper 
  • Rock salt or Celeri salt (optional)


For the hard boiled egg, 

  1. In a pot, add cold water and bring to boil. Once it is boiling, place the egg gently inside using a spoon (careful not to burn yourself) and count 8mins for a large egg
  2. Once the 8 mins are up, pour out the boiling water and run cold water over the egg for a minute, it stops the cooking process and helps cools down. This will make it easier for you to remove the eggshell

For the zucchini salad base,

  1. Using a peeler (preferably a wide blade peeler if you want the tagliatelle effect), peel the outter part of your green zucchini until you reach the heart, which is when you start to see the little seeds (you can keep that and use it in a soup, stew or salad another day) 

Add the toppings & dressing

  1. Add pieces of avocado 
  2. Add your cashews 
  3. Sprinkle your seeds mix 
  4. drizzle your dressing
