Pumpkin Puree Swirl [3 ingredients dessert]

Not too sweet, but just right.



  • 1.5 cups pumpkin puree 
  • 4 dates 
  • 2 tbsp coconut milk 


  • Dark chocolate chips (vegan or not)
  • Pecans 
  • Sprinkle cinnamon 


  1. Pre-heat oven at 200C
  2. Yesterday I had an entire Blue Pumpkin in my fridge, so i actually baked the entire this by simply putting the entire pumpkin on my baking tray, on a baking sheet in the oven for an hour at 200C (lowering the temperature at 180C after 40mins)
  3. Once the skin becomes soft, take out your pumpkin, let it cool and then the skin should peel right off 
  4. OR, you could just buy pumpkin puree at the store or use butternut instead of pumpkin
  5. Once your pumpkin is peeled, cut 1,5 cups worth of pumpkin 
  6. In a blender, mix your pumpkin, add 4 dates (without the seed! we don't want you breaking your blender and especially not your teeth!), and finally the 2 tbsp or 3 of coconut milk. 
  7. Mix well together for a minute or two
  8. Then add the toppings
  9. Place in the fridge for  half an hour at least to have it fresh and cool
