Honey roasted figs & parsnips with Rosemary

Vegan option - replace the honey with agave syrup

Serves 1 person

Takes about 20mins



  • 3 Figs
  • 1 parsnip 
  • 1-2 tbsp Honey (I used chestnut honey)
  • 1 tsp Olive oil
  • Pinch of salt 
  • 1 tbsp Rosemary (dry/store bought - or you can use fresh of course too) 


  1. Preheat the oven to 200C
  2. Peel & cut your parsnip into thin round slices, then cut those in half to make half moons 
  3. Wash & cut your figs into thin slices as well 
  4. Place both in a bowl, drizzle 1 tbsp of honey (or 2 if you want it sweeter) and 1 tsp of olive oil, mix it all together 
  5.  Lay down a parchment paper on a baking tray 
  6. Spread out your parsnip and figs evenly
  7. Sprinkle your salt and rosemary all over 
  8. Bake for 20mins @200C (watch the figs don't get burnt they may finish at 15mins. In this care simply take the figs out and leave your parsnips to bake for another 5-10 mins).
