Sweet, Salty & Crunchy Pumpkin Pecan Quinoa

This dish has it all! 

The sweet, the salty & that good ol' crunch. 

Vegan + Gluten Free (GF)

Takes 30-40 minutes to prepare

Serves 2 people



  • 2 cups butternut squash 
  • 1 cup quinoa (tricolore, just white, or just red)
  • 1/4 red onion 
  • 1-2 tbsp pistachios  
  • 2 tbsp pecans 
  • 2 tbsp cranberries 
  • 1 cup spinach
  • 1/3 cup parsley 
  • Olive oil 
  • 1 Lemon
  • Maple syrup (optional)
  • Rock salt 
  • Black pepper 
  • Goat cheese (optional for non-vegans)

Tip1: Pre-heat the oven to 200C

Tip 2: Once you put your quinoa on the stove to cook, prep the veggies 

Method for the quinoa,

  1. In a pot, add 1 cup of quinoa
  2. Then add 3 cups of cold water
  3. Add a pinch of salt
  4. Bring to boil
  5. Once the water is boiling, turn down the heat to low
  6. Let it cook for about 15 mins
  7. Stir to make sure it doesn’t stick to the bottom of your pot

Another way would be to,

  1. Place cold water in a pot with a pinch of salt
  2. Bring to boil 
  3. Add in your cup of quinoa 
  4. Stir to avoid it sticking at the bottom
  5. Let it cook for about 10mins so it remains a little crunchy 


Method for the butternut & red onion,

  1. You can use the same baking tray and parchment paper
  2. As mentioned above, pre-heat the oven to 200C
  3. Cut your butternut into small & thin pieces to let it cook at the same speed as the red onion 
  4. Peel and cut your red onion and separate the half moons as seen bellow 
  5. Before laying down on your parchment paper, place in a bowl and drizzle 1-2 tbsp of olive oil and 1 tbsp of maple syrup (you can omit the maple syrup if you do not have any) 
  6. Lay the butternut and red onion out on the baking tray, and sprinkle some rock salt 
  7. Place in the oven @200C for about 20-25mins depending on how thinly you sliced your butternut 
  8. Once it is ready, let the butternut cool down a bit and then cut into smaller cube shapes to make it look pretty in your quinoa salad 

So now that you have your cooked items ready, place everything in a large bowl; 

The quinoa, the butternut & the red onions 


  1. Chop your pecans and pistachios into small pieces 
  2. Wash & chop your parsley 
  3. Grab your cranberries
  4. Grab the washed spinach 
  5. Throw it all into the bowl 


  1. Squeeze the lemon juice of 1 lemon 
  2. Add 2 tbsp of olive oil 
  3. Add black pepper (and salt to taste if needed but I think you should be ok) 
  4. And Goat cheese bits (for non-vegans)

And voila! enjoy this heavenly bowl of goodness.
