Tomato bowl with red onions, black beans, sweet potato & basil

Tip: You can use the same baking try and bake the red onions and sweet potato at the same time. 

Ingredients for the red onions

  • 1/3 or 1/2 Red onion 
  • 2 tsp thyme (sage or rosemary ok too)
  • 1 tbsp olive oil
  • Pinch of salt 


  1. Preheat the oven @200C
  2. Cut & peel the red onion
  3. Cut into quarter and then cut that quarter into thin slices
  4. On a baking tray place a baking sheet and lay down your individual pieces of red onions
  5. Drizzle your olive oil, salt and thyme 
  6. Bake @200C for about 15-20 minutes until nicely browned 

Ingredients for the sweet potato

  • 1/2 sweet potato
  • 1 tbsp olive oil 
  • 1 tsp paprika
  • Pinch of salt 


  1. Pre-heat the oven @200C 
  2. Peel & cut your sweet potato into thin, bit sized round pieces
  3. Lay your sweet potato down on parchment paper, brushed on both sides with olive oil, sprinkled with paprika and a pinch of salt 
  4. Place on baking tray and bake for about 20mins (it depends how thinly you sliced them, so it could take less time or longer. Just be sure to keep an eye on them) 
  5. Once your sweet potato are nice and golden, you are donezooo!

Ingredients for the black beans

  • 1/2 can of black beans 
  • 1/2 lemon juice 
  • Fresh cilantro
  • Pinch of salt 
  • Pinch of black pepper
  • Pinch of cayenne pepper 
  • 1 red tomato (optional) 


  1. Mix all ingredients together
  2. If you are not going to be making the tomato bowl, you can add finely chopped tomatoes to the beans as well  instead

The tomato bowl is optional but if you have a large tomato handy, carve out the insides to have a bowl shaped tomato based, and add it to your baking try 10 minutes prior to your red onions and sweet potato being ready
