Raw Chocolate Coconut Cashew Bars

I hope you’ve all had a great, fun, relaxing weekend.

These Chocolate Coconut Cashew Bars were inspired by one of my favorite social media outlets, Tastemade.

They are fulfilling, little bars of heaven.

You know those days where you just want to carbo-load? When you are obsessed with getting your hands on anything containing carbs? Where you take a bite out of your pasta dish or out of a piece of bread and it hits the spot?  Well this will have the exact same satisfactory effect.

As always, this is an easy and straightforward recipe to try, so don’t be shy!

Prep time: 20 mins

Serves 4-6 people


  • 1 cup Raw Cashews
  • ½ cup Rolled Oats
  • ¼ cup Coconut Oil
  • ¼ cup Maple Syrup
  • 1/8 tsp salt  


  • 1/4 cup Coconut Maple Syrup
  • ¼ cup Coconut Oil
  • ¼ cup Raw Cacao Powder

Topping suggestions

  • Pinch of salt
  • Coconut flakes
  • Chopped pistachios


For the cashew layer,

  1. Blend all ingredients together in food processor
  2. Line your square mold with parchment paper, then add your cashew mix, pressing down evenly with a spatula
  3. Then store in the freezer while you prepare your chocolate layer

For the chocolate later

  1. Blend the ingredients together in your food processor, then layer it on top of your cashew mix.
  2. Place in the freezer for 2 hours or overnight.

Make sure you take it out of the freezer ±20mins before you’d like to enjoy xox
