Super Gourmand Chocolate Cinnamon Porridge with Sweet Potato Bites

The super gourmand chocolate cinnamon porridge bowl with baked sweet potato bites, banana, blueberries, almond butter, goji berries, chia seeds, pumpkin seeds.

This is the best bowl for when you wake up famished and in need of something consistent with all the appropriate and energy-boosting nutrients. 

It's Vegan & can be made gluten free if you use gluten-free oats and just keep everything else the same.

Ingredients for the Porridge

  • 1/2 cup oats 
  • 1 cup of almond milk + 1/3 cup coconut milk 
  • 1 -2 tbsp raw cacao (depending how chocolatey you want it)
  • 1 tsp vanilla 
  • 2 tbsp agave 
  • 1 tsp Cinnamon
  • 1-2 tbsp chia seeds 

Ingredients for baked sweet potato bites

  • 1/2 sweet potato
  • 2 tbsp maple syrup 
  • Sprinkle raw cacao 
  • Sprinkle Cinnamon 

Toppings

  • Baked maple sweet potato 
  • Banana
  • Almond butter 
  • Goji berries
  • Pumpkin seeds 
  • Blueberries

Method 

  1. Pre-heat the oven to 200C 
  2. Peel your sweet potato and cut into bite sized cubes
  3. Add all porridge ingredients in a pot and bring to boil 
  4. Once it is boiling, reduce the heat and let it sit for 2-3 more minutes to cook the oats 
  5. Once the oven is ready, on a baking tray, lay down parchment paper
  6. Then spread your sweet potato out on the parchment paper/tray sprinkled with raw cacao and a touch of cinnamon 
  7. Bake for 25-35 mins depending on the size of your sweet potato cubes 

Assembling the bowl

Once the porridge and sweet potato bites are ready, 

In your bowl, add your porridge, followed by the toppings of your choice
