10 Mins Customizable Vegan Buddha Bowl

Sometimes time gets away from us. You look at your watch, and BAM it's 3pm and you still haven't had lunch and you find yourself famished! What to prepare? Well, let me tell you...

10 MINS BUDDHA BOWL

PLANT BASED & VEGAN 

That will leave you feeling super satisfied and ready to tackle the rest of your busy day.

What do you need for the base? 

Ingredients = 1 Zucchini + 1 Lemon + Olive Oil + Salt + Black Pepper 

Tools = Vegetable Peeler

What do you do? 

Peel the zucchini to make zucchini noodles or 'Zoodles', then season with lemon juice, salt, pepper, and olive oil 

 

Next, your RAW veggie: you'll need to peel and chop 1 carrot, and season it as well. Top it off with some nuts (almonds, walnuts or pistachios), as well as some pomegranate seeds or peach. 

Instead of a carrot, you can also choose something else; such as tomatoes, corn, broccoli, turnip. 

Healthy Fats Alert!!! Cut an avocado in half, season it with lemon, salt, and cayenne pepper. You can also top it off with white and black sesame seeds if you'd like some crunch. 

Finally, choose a protein (plant-based) of your choice. Here I used organic store bought herbed tofu, seasoned with soy sauce, sesame oil, and pepper. But for instance you could use store bought chickpeas, white beans, or red kidney beans. 

If you do eat animal based protein you can add smoked salmon or grilled chicken. And for vegetarian, an egg is super quick to prep and can also be added to this dish. 

 

This buddha bowl is light, healthy, easy to make, and a great go-to for when you're in a rush.
