The Brownie Cake

Man oh Man do i love chocolate. and Man oh Man do I love a good brownie. 

My latest experiment was a huge success with my girlfriends who came over to test this new gluten-free, dairy-free, very rich cake, that will hit the spot and satisfy that chocolate craving you have.

It is rich, moist, mousse-like,

& super chocolatey. 

Prep Time: 20 mins

Freeze Time: Overnight or 2hrs ++

Serves 4 people

Dough / Base Ingredients

  • 1/4 cup Walnuts
  • 1/4 cup Hazelnuts
  • 1/4 cup mix of Brazilian nuts + Pistachios (optional, you can just do another 1/4 cup of walnuts instead)
  • 1 cup of Dates or 7-8 mejdool dates (soaked in hot water for up to 2 hours)
  • 3 Tbsp Raw Cacao
  • 1 tbsp Maple Syrup
  • 1 tsp Vanilla
  • 1/4 tsp Salt

Chocolate Filling Ingredients

  • 1/2 cup Raw Cashews (soaked for up to 6hours) 
  • 1/3 cup Almond milk
  • 2 tbsp Coconut Oil
  • 1 tsp Vanilla
  • 1/4 cup Raw Cacao
  • 2 tbsp Coconut nectar
  • 1 tbsp Maple Syrup
  • Pinch of Salt

Chocolate Glaze Ingredients

  • 2 tbsp Coconut Nectar 
  • 1 tbsp Maple Syrup
  • 3 tbsp Raw Cacao
  • 3 tbsp Coconut Oil

Topping suggestions

  • Coconut flakes
  • Goji Berries
  • Dried white mulberries  

Method

For the base,

  1. Combine all ingredients in a food processor and blend until you have a dough like consistency. This may take a little bit of time, seeing as the nuts are quite stubborn to grind. 
  2. Place/line parchment paper inside your mold of choice and lay the blended crust mixture down evenly
  3. Place the crust in the freezer while you work on your chocolate filling for about 10 mins

 For the chocolate filling,

  1. Combine all ingredients in your food processor and mix until the texture is smooth and creamy. 
  2. Place the chocolate filling over your crust, spreading it evenly, and leave it in the freezer to sit for about 2 hours or keep in the fridge overnight.

For the chocolate glaze,

  1. Before feasting, make sure you keep the cake out at room temperature ±25mins so it isn’t too frozen
  2. Prepare your chocolate glaze by simply mixing the ingredients together, then spread it on top of your chocolate brownie cake
