Lemongrass, Ginger, Coriander Quinoa with Butternut & Parsnips

Ingredients

  • 1 cup quinoa
  • 1/4 white onion
  • 2-3 garlic cloves
  • 1.5 tsp lemongrass powder (or 1 tsp fresh lemongrass chopped)
  • 2 thumb size pieces of fresh ginger 
  • 1/4 cup butternut 
  • 1/4 cup parsnip
  • Pinch of salt
  • 1/2 cup coconut milk
  • 1/4 cup water (optional - for when the coconut milk starts to reduce to avoid burning or you can just add more coconut milk) 

Tip: As you wait for your quinoa water to boil, prep the veggies/stew ingredients

Method for the quinoa,

  1. In a pot, add 1 cup of quinoa
  2. Then add 3 cups of cold water
  3. Add a pinch of salt
  4. Bring to boil
  5. Once the water is boiling, turn down the heat to low
  6. Let it cook for about 15 mins
  7. Stir to make sure it doesn’t stick to the bottom of your pot

Another way would be to,

  1. Place cold water in a pot with a pinch of salt
  2. Bring to boil 
  3. Add in your cup of quinoa 
  4. Stir to avoid it sticking at the bottom
  5. Let it cook for about 10mins so it remains a little crunchy 

Method for the lemongrass coconut butternut & parsnip stew,

  1. Chop your onion & garlic cloves into small pieces 
  2. Be sure to remove the 'germ' from the center of the garlic to avoid a bitter taste
  3. add your onion and garlic into your pot, sprinkle your lemongrass powder, pieces of fresh ginger, a pinch of salt, and place on high heat
  4. Mix well to avoid the onion & garlic getting burnt 
  5. Then reduce the heat to medium and add in your butternut and parsnips which you've cut into small bite size pieces 
  6. Mix it all well together and let the butternut & parsnip absorb the aromas of the lemongrass
  7. After about 5 mins, add in your coconut milk and bring to boil
  8. Mixing every so often to avoid that your veggies get stuck at the bottom of the pot
  9. Once it is boiling, you may need to add some water or more coconut milk if you notice that the liquid is reducing too much too quickly so keep a glass of water ready or some coconut milk
  10. Let it cook for about 15-20mins
  11. Once the butternut and parsnip is tender, turn off the heat
  12. Remove the pieces of fresh ginger from your mixture 

 

Place your quinoa either into the stew directly

Or

Place your quinoa in your serving bowl, then add the stew/sauce on top.
