Cauliflower Pizza with Avocado Cream, Tomatoes, Carrots & White Beans

It's almost the weekend! which calls for...

PIZZA! 

And not just any pizza...

CAULIFLOWER PIZZA.

It's my first time trying this, and I must say I am in love. 

I still have some work to do with regards to the 'dough' or base, but it still turned out so nicely that I wanted to share it with you. It's just that the base isn't solid enough yet. 

Anyhow, a lot more pizza varieties (sweet potato crust, pumpkin crust, etc.) to come! So we shall get it just right, I promise! 

Is it vegan? Yes.

Is it gluten free? Yes. 

Is it delicious? YES.

Serves 1-2 persons

I ate the entire pizza in one sitting. It is so light & fresh.

That's never happened to me before, usually pizza's are quite heavy and filling but this, this was just lovely. 

Ingredients

For the base,

  • 2 cups Cauliflower (or 230g)
  • 1 tbsp Oregano 
  • 1 tsp garlic salt 
  • 3 tbsp chia seeds 
  • 4 tbsp water
  • 1 tbsp olive oil

Bake @205C for 30-35mins (depending on how thinly you layed out our crust). Be sure to keep an eye on it, so that it does not burn. 

While the crust is in the oven, you can get started on your avocado cream and preparing the rest of the veggies for your toppings.

For the avocado cream, 

you'll need 

  • 1/2 avocado 
  • 2 tsp lemon juice 
  • Pinch of salt
  • Pinch of black pepper 
  • Pinch of cayenne pepper (optional)

Simply add all ingredients to your blender and mix. 

Lay your avocado spread out evenly on your cauliflower crust.

Next, 

Simply peel & cut the carrot (it doesn't have to be purple, regular orange is fine!) 

Wash and cut your tomatoes in four, and simply make a little garden out of your carrot slices and tomatoes. Spread them out all over your avocado cream.

Finally, 

Add white fat butter beans throughout; or if you'd prefer some tofu, or red kidney beans, or chickpeas, that is totally fine too!
