Tomato Basil Garlic Chickpea Noodles

Carbs? Oh but yes! Buckwheat Soba noodles to be exact.

Vegan & GF? Abso-friggin-lutely!

Protein? Hells to the yes! Chickpeas ALERT.

Delicious? mmmmm yup, I would definitely say so. 

30 minutes or less? You bet.

Recipe serves 1 person

All ingredients needed

  • 80g soba noodles or rice noodles or your choice of pasta
  • ½ Onion, chopped
  • 2 tbsp Olive oil
  • 8 oz of organic diced tomatoes
  • 1 tbsp tomato Concentrate
  • 2 Garlic cloves
  • ½ cup of fresh Basil, chopped
  • Black pepper, to taste (1 tsp should be fine)
  • ½ tsp Salt (optional, because of tomato concentrate)
  • 1/3 glass jar of chickpeas or canned 
  • 1 tsp pumpkin seeds
  • 1 tsp lin seeds
  • 1 tsp almond flakes (or chopped raw pistachios)
  • Fresh basil (topping)

Ingredients for the Tomato Sauce

  • ½ Onion, chopped
  • 2 tbsp Olive oil
  • 8 oz of organic diced tomatoes
  • 1 tbsp tomato Concentrate
  • 2 Garlic cloves
  • ½ cup of Basil, chopped
  • Black pepper, to taste (1 tsp should be fine)
  • ½ tsp Salt (optional, because of tomato concentrate)

Simply blend all ingredients together in your food processor.

Otherwise, you could also buy from your organic store an already made tomato basil sauce.

Ingredients for the soba noodles

  • 80g soba noodles 

Method for the noodles,

  1. In a pot, place cold water with a dash of salt and bring to boil
  2. Once the water is boiling, add in your soba noodles for 6 minutes exactly (that's for my organic Lima brand) 
  3. CAREFUL! when you place the soba noodles, usually a white foam will form and build up. You need to blow on it continuously to prevent it from spilling everywhere. Keep a good eye on your pot, don't just throw in your soba noodles and leave them. 
  4. At 6 minutes precisely, rid the pasta of the water in the pot, and place the pasta/noodles back in the pot. 
  5. NOTE: you could substitute the soba noodles for rice noodles, which instead you dip in cold water on the side for 10minutes as you bring your water to boil, and then once the water in boiling you add the rice noodles for 5 minutes. 

 

Putting it all together

  1. Add your tomato sauce to your pasta
  2. add in the chickpeas (drained)
  3. Add the seeds (lin/pumpkin) & almond flakes (or pistachios if you prefer)
  4. Finally mix it all together and top it off with some fresh basil
