Black Rice Noodles & Avocado Pesto (Oh, & a boiled egg too)

Gluten-free, Carb-loaded, protein-friendly, flavorful lunch? Coming right up!

This creamy, green, light recipe has 3 components to it, but not to worry! They can be done simultaneously as long as you have two pots to boil water in and of course, your trusty blender. It shouldn't take you more than 25mins, tops.

The 3 components include:

  1. One boiled egg
  2. Black rice noodles(regular white rice noodles are fine, or pasta if you aren’t intolerant to gluten)
  3. Avocado-pesto sauce

Boiled Egg

Prep time: 5 mins (bringing water to boil)

Cook time: 6 mins

Rice Noodles

Prep time: 5 mins (bringing water to boil)

Cook time:  5 mins 

Avocado Pesto Sauce

Prep time: 10 mins

Total time: ±20mins

 

Ingredients

  • 1 egg (or 2 or 3 if ever you worked out prior to this meal, why not? go crazy!)
  • Handful of rice noodles

Avocado Pesto Sauce Ingredients

  • 2 cups Fresh Basil
  • ½ Avocado
  • 1-2 Garlic cloves
  • ¼ cup Pine nuts (optional)
  • 1 Lemon
  • 1/3 Zucchini (optional)
  • ½ tsp Paprika
  • Pinch of Salt

Topping suggestions

  • Hemp seeds
  • Sunflower seeds
  • Chili flakes
  • Black Pepper
  • Splash of Olive Oil & Paprika (on the Egg)

Prep Tips

  • Use two pots, one for the egg and one for the noodles to cook both components at the same time. Place cold water in both pots, bring to boil & let it cook.
  • While waiting for your water to boil, prepare the avocado-pesto sauce.

 

Method

For the egg,

  1. In a pot, add cold water and bring to boil. Once it is boiling, place the egg gently inside using a spoon (careful not to burn yourself) and count 5-6 mins for a large egg
  2. Once the 6 mins are up, pour out the boiling water and run cold water over the egg for a minute, it stops the cooking process and helps cools down. This will make it easier for you to remove the eggshell

For the rice noodles,

  1. In a pot, add salt and cold water, then bring to boil. Once boiling, place the rice noodles and count 4-5 mins, depending if you’d prefer them aldente.
  2. Once the 4-5 mins are up, pour out the boiling water and run cold water over the noodles for a minute or so, to stop the cooking and help them cool down

For the avocado-pesto sauce,

  1. Place all your ingredients in a blender
  2. Blend until you have a smooth and creamy texture
